 Cathy's Kitchen this time is both from a Famous Restaurant "Junos" and includes one of the Super Foods.

Tomato Quinoa Pilaf
1 T. onion (finely diced)
1 T.. garlic (finely diced)
1 T. oil
1 C. broth (or bouillon)
1 C. quinoa
T. basil (fresh or dried)
1 T. parsley
1 tsp. thyme
¾ C. small tomatoes (grape size cut in half)
1/3 C. Cheese (crumbled Feta)
2 tsp. lemon juice

In small pan add onions, cook over high heat a couple minutes, add garlic, quinoa, sauté a couple minutes.
Add broth, salt and pepper to taste, bring to boil.
Cover, simmer about 14 minutes until liquid is absorbed. Remove from heat, still covered allow to cool a few minutes.

Stir in basil, parsley, thyme, feta, lemon juice and tomatoes.

With a dash of balsamic vinaigrette dressing, any leftover becomes a lovely cold summer salad.

Caribbean Okra Fish Gumbo
2 lb. fish
1/2 tsp. cayenne pepper
1/2 C. oil
2 lb. okra (chopped)
1 T. tomato paste (or catsup)
1 tomato (diced)
1 onion (small-chopped)
4 cloves garlic (minced)
1 C. celery (chopped)
1 green bell pepper (chopped)
12 cups water
Optional 4 Green Onions (chopped)

Season fish, salt and pepper to taste.

In large pan add oil, okra and saute 28 minutes, stirring occasionally over medium heat.

Add tomato paste, tomato, onion, garlic, celery and bell pepper, saute 15 minutes.

Add water, bring to boil, reduce heat, simmer for 45 minutes. Add fish, simmer 12 minutes more. Dress by topping with chopped green onions if available.
