this time is both from a
Famous
Restaurant "Junos" and includes one
of the
Super Foods.
Tomato Quinoa Pilaf
1 T. onion (finely diced)
1 T.. garlic (finely diced)
1 T. oil
1 C. broth (or bouillon)

1 C. quinoa
T. basil (fresh or dried)
1 T. parsley
1 tsp. thyme
¾ C. small tomatoes (grape size cut in half)
1/3 C. Cheese (crumbled Feta)
2 tsp. lemon juice
In small pan add onions, cook over high heat
a couple minutes, add garlic, quinoa, sauté
a couple minutes.
Add broth, salt and pepper to taste, bring
to boil.
Cover, simmer about 14 minutes until liquid
is absorbed. Remove from heat, still covered
allow to cool a few minutes.
Stir in basil, parsley, thyme, feta, lemon
juice and tomatoes.
With a dash of balsamic vinaigrette
dressing, any leftover becomes a lovely cold
summer salad.
