     Famous Classy Sassy Bistro's Glazed Carrots

    Perfect easy summer fare-- delicious alternative to a heavy side dish.

    2 lbs baby carrots
    1 ½ C. orange juice
    3 T. syrup (maple is great)
    ½ C. water
    1 T. margarine

    Add carrots, orange juice, syrup, water in sauce pan, bring to boil over medium heat about 28 minutes or until liquid is almost gone and carrots tender.

    Remove from heat, add salt, pepper, butter or margarine to taste.
    Serves 8

    In the works is a Fall Pumpkin Fest Fundraiser, a Dinner On A Dollar Cook Book for the holiday season, and a TV cookikng show for early 2012.

    We're also rebulding two of the five Dinner On A Dollar websites while again soliciting Volunteers and Interns to help.

     Chicken Blueberry Pasta

    * 1 lb. Chicken
    * 12 oz. Pasta
    * 4 T. Olive Oil
    * 1 Onion (finely minced)
    * 1/3 C. Chicken broth (or 1 bullion cube)
    * 1/3 C. crumbled cheese
    * 3 tablespoon(s) lime juice
    * 1 C. dried or frozen blueberries
    * 1 T. thyme (dried is cheaper and ok.)
    * 1 tsp. Lemon or Lime peel (zest, grated)

    Add chicken to saucepan, cover with water, bring to boil. Lower heat, simmer until cooked tender. Remove, let cool, shred into bite-size strips.

    Cook pasta according to packaged directions. Set aside in bowl with chicken.

    In skillet, add oil, minced onion, cook until browned stirring occasionally, about 4 minutes. Add broth, lemon/lime zest, blueberries, thyme, and cook, stirring until cheese begins to melt.

    Pour the dressing over chicken and pastawl with the pasta. Salt and Pepper to taste.

    Season To Taste...

    Sometimes simple seasons enhance many foods more then expected. One of these is as quality tasty oils.

    Flavored Olive Oil is a handy addition to every kitchen.

    Garlic Oil
    Makes 2 cups

    22 cloves of garlic
    2 cup olive oil
    2/3 cup balsamic vinegar
    2 tsp. fresh rosemary (finely chopped)

    Drizzle unpeeled garlic cloves with a dash of oil, toss to cover them, wrap in foil and bake at 350 degrees 40 minutes or until golden color. Remove and allow to cool.

    Press garlic bulbs between hands to remove core cloves. Mash or use blender to pulverize, add vinegar and rosemary, puree until smooth. Mix in remaining olive oil. Add salt and pepper to taste. Refrigerate in covered container at least 3 days. When ready to use as dressing or for dipping oil, allow to return to room temperature.
